INGREDIENTS:
Before we dive into the cooking process, let’s take a look at the wholesome ingredients that make these pancakes a nutritional powerhouse:
1 ripe banana
75g oats ( I used ultra fine oats from Bulk)
3 large eggs
2 tbsp milk (dairy, soya, oat, or nut milk, whichever you prefer)
1 tbsp baking powder
A pinch of cinnamon
2 tbsp protein powder (whey, pea, or your preferred variety)
Coconut oil or a flavourless oil for frying
Topping: Protein powder mixed with the milk, maple syrup, nut butter, and your choice of berries or sliced banana to serve
1. Blend and Mix:
Start by peeling the ripe banana and placing it in a blender. Add the oats, eggs, milk, baking powder, cinnamon, and protein powder to the blender as well. Blend everything until you have a smooth and creamy batter. This step should only take a minute or so.
2. Heat the Pan:
Heat a non-stick pan over medium-high heat and add a small amount of coconut oil or your chosen cooking oil. Allow it to melt and coat the pan evenly.
3. Pour and Cook:
Once the pan is hot and the oil is well-distributed, pour a small amount of pancake batter into the pan to form your desired pancake size. Cook until you see bubbles forming on the surface, then flip the pancake and cook the other side until it’s golden brown.
4. Stack and Serve:
Continue cooking the pancakes in batches, adding more oil to the pan as needed. As each batch is ready, stack the pancakes on a plate.
5. Top It Off:
To serve, spread a dollop of nut butter on each pancake, drizzle with maple syrup, and add a generous handful of fresh berries or sliced banana. The combination of sweet, creamy, and fruity flavors is simply irresistible!
